Adding practical effects is simple but not as easy as it looks. You can fling handfuls of sand or small buckets of water at the horse's feet to make the effect of him kicking up sand or water. Getting the effect in the right place at the right shutter time is the hard part. I use sport continuous mode on my Nikon Coolpix L100 to capture the action.
There's a lot of shots where the flying stuff isn't in the right place at the right time.
